Ron and I have been pescatarians for over 30 years. However, we often eat vegetarian meals. I love to find different recipes to make for dinners. Friday night is a soup or pizza night.

Broccoli Soup

Equipment
- 1 Soup Pot
- 1 Wooden Spoon
Ingredients
- 4 tbsp butter room temperature
- 1 1/2 lbs fresh broccoli
- 1 large onion chopped
- 1 carrot chopped
- 1 tsp salt and freshly ground black pepper or to taste
- 3 tbsp all purpose flour
- 4 cups low-sodium vegetable broth
- 1/2 cup cream
Instructions
- Melt 4 tbsp. butter in heavy medium pot over medium heat.
- Add broccoli, onion, carrot, salt and pepper.
- Sauté until the onion is translucent. (about 6 min.)
- Add the flour and cook for one minute until it reaches a blonde color.
- Add stock and bring to boil.
- Simmer uncovered until broccoli is tender. (about 15 minutes)
- Pour in cream
- Puree the soup and return to the pot to continue heating.
- Serve hot.
Notes
- The original recipe calls for chicken broth. We are vegetarians, so I used vegetable broth.
- This recipe came from The Food Network app. The Neelys gave a homemade crouton recipe for the soup.
- I made Bisquick biscuits with cheddar cheese to go with them.
This soup is so good-especially with cheddar cheese and sour cream.
