It’s Broccoli Soup Tonight!

Ron and I have been pescatarians for over 30 years. However, we often eat vegetarian meals. I love to find different recipes to make for dinners. Friday night is a soup or pizza night.

Broccoli Soup

Equipment

  • 1 Soup Pot
  • 1 Wooden Spoon

Ingredients
  

  • 4 tbsp butter room temperature
  • 1 1/2 lbs fresh broccoli
  • 1 large onion chopped
  • 1 carrot chopped
  • 1 tsp salt and freshly ground black pepper or to taste
  • 3 tbsp all purpose flour
  • 4 cups low-sodium vegetable broth
  • 1/2 cup cream

Instructions
 

  • Melt 4 tbsp. butter in heavy medium pot over medium heat.
  • Add broccoli, onion, carrot, salt and pepper.
  • Sauté until the onion is translucent. (about 6 min.)
  • Add the flour and cook for one minute until it reaches a blonde color.
  • Add stock and bring to boil.
  • Simmer uncovered until broccoli is tender. (about 15 minutes)
  • Pour in cream
  • Puree the soup and return to the pot to continue heating.
  • Serve hot.

Notes

  1. The original recipe calls for chicken broth. We are vegetarians, so I used vegetable broth.
  2. This recipe came from The Food Network app. The Neelys gave a homemade crouton recipe for the soup. 
  3. I made Bisquick biscuits with cheddar cheese to go with them.
