I have made a lot of different veggie burgers, and this one is the one we liked best. It was really easy and used items I already had in my kitchen.

First, I got some white beets from the ugly produce section at Four Season Farm. These are veggies that can’t be sold and are put aside for locals to take for free.

I chopped them up and put them through the shredder on the food processor. After shredding, I simply put the rest of the ingredients in the food processor with the blade and mixed until all the ingredients were thoroughly combined. After mixing, I made them into patties, fried them and served them with fried zucchini.

White Beet Burgers

Prep Time 45 minutes
Cook Time 10 minutes
Total Time 55 minutes
Servings 6 burgers

Equipment

  • 1 Food Processor
  • 1 Colander
  • 1 Frying Pan
  • 1 Spatula

Ingredients
  

  • 2 cups beets (I used white beets.) raw and sliced
  • 3/4 cup rolled oats
  • 1/2 cup cooked lentils can also used canned
  • 1/2 cup flour (I used almond flour.)
  • 1/2 onion chopped
  • 2 cloves garlic
  • 1 Tablespoon peanut butter
  • 2 teaspoons Thyme
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1/2 cup breadcrumbs or amount needed to stiffen mixture
  • 2 Tablespoons olive oil extra virgin
  • Hamburger Buns

Instructions
 

  • Peel and chop beets in food processor
  • Add rest of ingredients and process together until mixed
  • Transfer mixture into a bowl
  • Add breadcrumbs until the mixture becomes stiff
  • Make into patties
  • Fry in olive oil until golden brown on each side.
